Combat Cooking – Italian Peasant Food (click for recipes)

Recipes: Italian Peasant Food

1 pack Italian Sausage

2 peeled potatoes

2 bell peppers

1 yellow onion

Brown sausage, add chopped veggies, cover and cook for 45 minutes at 375 degrees

Cherry Almond Pie:

Pie crust

1 can Eagle Brand Sweetened condensed milk

1/3 cup Lemon Juice

1 tsp. almond extract

1 tsp. vanilla extract

1 pkg. Dream Whip

3/4 cup sliced Almonds

1 can cherry Pie filling

Blend condensed milk and lemon juice until thick, add almond and vanilla extract, spoon into pie crust, top with cherry pie filling, sliced almonds and dream whip.

“Coq au Vin” (Bacon Chicken)

Ingredients:

4 strips of bacon

4 chicken thighs

1 yellow onion

12 whole mushrooms

1 cup rice

2 cups chicken broth

splash of white wine

Cook for 45 minutes at 350 degrees

Bread Pudding

Ingredients:

12-14 cups dried bread

6 eggs

1 3/4 cup brown sugar

1 cup Almonds – chopped

1 cup Apricots – dried

1 T. Almond extract

1 T. Apricot brandy

6 cups whipping creme

These ingredients sit for 10 minutes then put on oven for 45-50 minutes at 350 degrees

Carmel Sauce

1 cup cream

1 cup butter

1 cup brown sugar

Microwave 2 minutes, then stir

Microwave 2 more minutes, then stir

Pour over bread pudding

Look for this show every Tuesday at 6:30 pm starting Jan. 8th
